वेजिटेबल मंचूरियन एक इंडो-चाइनीज फूड है। यह एक विदेशी व्यंजन है जिसे स्टीम्ड मिक्स वेजिटेबल से बनाया जाता है और जिसे डीप फ्राई किया जाता है और एक तीखी चटनी में पकाया जाता है। यह बहुत ही सरल सामग्री का उपयोग करके बनाया जाता है , इसमें थोड़ी सी चॉपिंग और तैयारी शामिल होती है लेकिन अंतिम पकवान प्रयास के लायक है! – वेज मंचूरियन हिंदी रेसिपी!
रेसिपी – वेज मंचूरियन!
तैयारी का समय – 15 मिनट
पकाने का समय – 15 मिनट
कितने लोगो के लिए – 4
सामग्री :-
मंचूरियन बॉल्स के लिए –
डेढ़ कप पत्ता गोभी (बारीक कटी हुई)
1 कप गाजर (बारीक कटी हुई)
1/2 कप बीन्स (बारीक कटी हुई)
2 चम्मच अदरक (कटा हुआ)
1 बड़ा चम्मच हरी मिर्च (कटी हुई)
1/2 कप स्प्रिंग अनियन (कटा हुआ)
मुट्ठी भर धनिये के पत्ते (कटी हुई)
नमक स्वादअनुसार
1/2 छोटा चम्मच काली मिर्च पाउडर
2 बड़े चम्मच सोया सॉस
1/2 छोटा चम्मच बेकिंग पाउडर
2 बड़े चम्मच कॉर्न स्टार्च
4 बड़े चम्मच मैदा (सभी उद्देश्य के लिए)
एक पानी का छींटा
तलने के लिए तेल
विधि :-
मंचूरियन बॉल्स के लिए –
- एक मिक्सिंग बॉल्स में, सभी सामग्री डालें, अच्छी तरह मिलाएँ।
- एक कढ़ाई में डीप फ्राई करने के लिए तेल गरम करें।
- मंचूरियन बॉल्स को सुनहरा भूरा और कुरकुरा होने तक तलें।
- एक प्लेट में निकाल लें, आगे उपयोग के लिए अलग रख दें।
सामग्री :-
मंचूरियन ग्रेवी के लिए –
3 बड़े चम्मच तेल
2 सूखी लाल मिर्च
1 बड़ा चम्मच लहसुन (कटा हुआ)
1 बड़ा चम्मच अदरक (कटा हुआ)
1/4 कप प्याज (कटा हुआ)
1/4 कप शिमला मिर्च (कटी हुई)
2 बड़े चम्मच सूखी लाल मिर्च का पेस्ट
1 बड़ा चम्मच सिरका
2 बड़े चम्मच सोया सॉस (हल्का)
2 चम्मच हरी मिर्च (कटी हुई) (वैकल्पिक / स्वाद के लिए)
नमक
3 कप पानी/सब्जी स्टॉक (आवश्यकतानुसार)
1 बड़ा चम्मच कॉर्न स्टार्च
1/4 स्प्रिंग अनियन (कटा हुआ)
तैयार मंचूरियन बॉल्स
ध्यान दे :-
- मुठ्ठी भर लाल मिर्च को पानी में भिगो दें और फिर इसे पीस कर पैन में डाल दें।
- अगर आपके पास सूखी लाल मिर्च नहीं है तो आप 1 बड़ा चम्मच कश्मीरी लाल मिर्च पाउडर 4 बड़े चम्मच पानी डालकर भी इस्तेमाल कर सकते हैं।
- एक छोटी कटोरी में 1 बड़ा चम्मच कॉर्न स्टार्च और 3 बड़े चम्मच पानी डालकर इसे अच्छी तरह से मिक्स करके पैन में डाल दीजिए।
विधि :-
मंचूरियन ग्रेवी के लिए –
- एक पैन/कढाई में तेल डालें।
- सूखी लाल मिर्च, अदरक और लहसुन डालें, अच्छी तरह मिलाएँ और 2 मिनट तक पकाएँ।
- प्याज़, शिमला मिर्च और सूखी लाल मिर्च का पेस्ट डालकर अच्छी तरह मिलाएँ और 2-3 मिनट तक पकाएँ।
- सिरका, सोया सॉस, हरी मिर्च और नमक डालें।
- वेजिटेबल स्टॉक और कॉर्न स्टार्च डालें, अच्छी तरह मिलाएँ और उबाल आने दें।
- मंचूरियन बॉल्स डालें, अच्छी तरह मिलाएँ और ग्रेवी को गाढ़ा होने दें।
- और अपने पसंद के चावल के साथ गरमागरम परोसें।
मंचूरियन को सजाने के लिए –
- स्प्रिंग अनियन (कटा हुआ)
टिप्स और ट्रिक्स –
- जब आप वेज मंचूरियन बनाते हैं, तो मंचूरियन मिश्रण में बेकिंग पाउडर सबसे महत्वपूर्ण चीज है अगर आप बेकिंग पाउडर का इस्तेमाल नहीं करते हैं। जो मंचूरियन बॉल्स बनेंगे वो बहुत सख्त बनेंगे इसलिए आप बेकिंग पाउडर का जरूर उपयोग करे।
- जब आप सॉस तैयार कर लें, तो तुरंत मंचूरियन बॉल्स को सॉस में न डालें। यदि आप इसे तुरंत सॉस में डालेगे, तो यह टूट जाएगे। इसलिए आप जब भी वेज मंचूरियन सॉस का उपयोग करना चाहें तो उसी समय आप मंचूरियन बॉल्स को सॉस में डालें ताकि वह टूटे नहीं।
